Ceramic pans are safe for stove top use on electric gas and ceramic cooktops and some pans are also oven safe at temperatures up to 400 degrees f although they re not broiler safe.
Do ceramic pans need oil.
After the oil has started smoking take your ceramic pan off of the burner and let it cool down until it is back to room temperature.
Do not wash your ceramic pan in the dishwasher.
When cooking with high heat which you can with cast iron pans for example you need to look for oils with high smoke points.
Most dishwashing detergents are packed with harsh chemicals that your pan may not be able to withstand.
Many cooks like using ceramic pans because of the cookware s consistent heat distribution nonstick properties and easy cleanup.
Sol gel is a silicone oil that is impregnated into the cookware s surface and releases during use.
Even if the instructions on the ceramic pan say it s okay to wash it in the dishwasher wash it by hand.
That said i would avoid using evoo or low smoke point oils when using this pan or any ceramic nonstick pan for high heat cooking or frying.
About healthy oils i mentioned the health benefits of olive oil earlier but coconut oil is also considered a healthy choice because of its polyphenolic properties that purportedly play a role in protecting us from inflammation and heart disease.
For that we suggest high smoke point oils like grapeseed or avocado oil these are much less likely to burn or decrease the nonstick properties of your pan.
While most non stick ceramic frying pans are oven safe double check the instructions that come with your pan before leaving it in the oven.
